Kung Pao Cauliflower 👩‍🍳😍

Kung Pao is a popular class of recipes from the Schezuan region.It is a delicious stir-fry that is spicy, hearty, satisfying, and comforting. 
The Kung Pao sauce has the perfect combination of spicy, salty and sweet flavors which will make your mouth water.🤤
~~
Ingredients:
 
For the baked crispy cauliflower-
 5 tbsp corn starch
 6 tbsp bread crumbs
 Water
 1/2 tsp cayenne(1/3 tsp for less heat)
 2 tsp soy sauce
 1/4 tsp salt
 1/4 tsp roasted sesame oil
 1 tsp oil
 1 medium head of cauliflower chopped into florets

 For the Kung Pao sauce-
 1 tsp oil
 8 to 10 dry red chillies
 1/2 tsp coarsely crushed sichuan peppercorns or use a mix of coarsely crushed black pepper and red pepper flakes
 2 to 3 tbsp chopped cashews
 4 to 5 gloves of garlic
 1 inch ginger minced
  2 tbsp chopped scallions
 
 Sauce mix-
 2.5 tbsp low sodium soy sauce
 1.5 to 2 tbsp rice vinegar
 1 tbsp sugar
 1 tsp corn starch
 Water

Method:
Chop up the garlic and keep aside. Pre-heat the oven to 425°F. Mix cornstarch, breadcrumbs and rest of the ingredients to make a batter. After it gets thick, dip the cauliflower and bake for 30 mins or longer until they are cooked. Meanwhile, heat oil in a skillet over medium high heat and add red chillies, peppercorns and cook. Add the nuts and mix for a few seconds. Add ginger, garlic and cook until the garlic is golden.  Add in scallions and other veggies and cook for a minute. Mix the sauce ingredients in a bowl and add to the skillet. Continue to cook until the sauce comes to a boil and thickens slightly. Taste and adjust salt, sweet and spice.
You are ready to eat the Crispy Kung Pao Cauliflower 😋. 
Serve hot and enjoy!!

Garlic Hakka noodles 👩‍🍳😋
 
A simple but snazzy dish in which boiled Hakka noodles are tossed with garlic, seasonings and sauces. This recipe is absolutely no-fuss but has a strong and vibrant flavour dominated by garlic and balanced by the sauces. 

It is better to serve the Garlic Noodles immediately after preparation in order to achieve the right consistency. 
Since it takes only a few minutes to cook, you can keep the ingredients ready and toss it just before serving.

Ingredients:
Hakka noodles
Garlic
Thinly chopped veggies of your choice
Soya sauce 
Vinegar
Oil
Salt
Pepper

Method:
Boil the noodles 80%(not fully cooked). Heat the oil in a broad non-stick pan , add the garlic and sauté on a medium flame for 30 seconds. Add all the remaining ingredients, toss gently and cook on a medium flame for 2 minutes, while stirring occasionally.
Serve immediate and enjoy!!🥰

Mirchi ka Salan 👩‍🍳🤩

Mirchi ka Salan is one of the  popular Classic Hyderabadi Dishes that is served as a side dish with biryani.

It is a very delicious and tasty biryani gravy made using green chillies that are not very hot.

Ingredients:
8 to 10 long chillies/bhavnagri chillies
2 tbsp oil
1/2 tsp mustard seeds
1 sprig curry leaves
1 1/2 tsp tamarind pulp
1/2 tsp red chilli powder
haldi/turmeric powder 1/4 tsp
1tsp jaggery(optional)
salt
 Masala Paste-
 1/4 cup peanuts
 1 tbsp sesame seeds/til
 1 1/2 tsp coriander seeds
 1/2 tsp cumin seeds
 1 onion sliced
 4 to 5 tbsp dessicated coconut/khobra
 5 to 6 garlic cloves
 1 inch ginger
 4 to 5 dry red chillies

Method:
Heat a skillet/tava ,dry roast coriander seeds ,chilli ,cumin, sesame seeds till fragrant.Remove in a plate and keep aside.Add coconut and roast till it turns golden brown. Remove it in the same plate .Dry roast the peanuts and set aside.Now add  the sliced onions ginger and garlic and saute till onions turn light brown. Then keep aside.
Adding little water grind all this to a smooth paste.Wash the chillies and wipe them .Make a slit and deseed them.Heat a pan and add about 1 tsp oil. Once the oil is hot, fry the chillies till you see whitish skin like blisters on them .Remove and keep aside.Add more oil in the same pan and once its hot add the curry leaves followed by mustard seeds.Once they splutter, add the masala paste and saute well till the mixture releases oil.Add red chilli powder salt and mix well.Add around 1 1/2 cup water and let the masala cook well.Add the tamarind pulp jaggery and let it cook for 5 minutes.
*If you want it to be more tangy add 1/2tsp more of pulp(check the gravy before adding more)
Add more water if required.Lastly add the fried chillies and let it cook for 2 to 3 minutes.

Garnish with coriander leaves and dish out.
Serve hot with biryani/chapati or paratha and enjoy 😋

Vegetable Dum Biryani 👩‍🍳🤤

Dum pukht is a slow cooking technique and can be translated as ‘dum’ meaning ‘breathe in’ and ‘pukht’ meaning ‘to cook’. It basically refers to letting the dish breathe in its own aroma or juices to make it more flavourful. Therefore large handis are sealed with dough or cloth to trap the steam, which then cooks the rice until tender.
This is inspired from the Mughlai way of cooking. 

It is a delicious medley of succulent vegetables, spices, ghee, saffron and flavourful basmati rice which no one can resist.

Whole wheat cheese herb biscuits 👩‍🍳🤤

These crispy biscuits are my new favourite cookies to enjoy with my morning or evening chai.
They are easy to make at home with basic pantry ingredients.

Ingredients:
1cup atta
1/2cup oats flour
2tbsp cold butter
Pinch of baking powder
Pinch of baking soda
1tsp salt
2tbsp col grated cheese
1/2tsp chilli flakes
Milk to kneadal the dough
1tsp mix herbs (oregano,basil,thyme, rosemary)

Method:
Mix all the dry ingredients in a bowl. Then add cold butter and cheese, and rub with your fingers to make a bread crumb like texture. Now kneadal with very little cold milk. Keep it in the fridge for 10-15mins. Then roll and cut into desired shape. Bake it for 15-20mins at 170°.
The biscuits are ready to be eaten.
Have them at any hour of the day.

Zucchini Brownie with Vanilla Icecream 👩‍🍳😋

Homemade Brownie Sundaes are a classic desert that never gets old. Thick fudgy brownies topped with hefty scoops of vanilla icecream and  chocolate sauce.

For Brownie:
 INGREDIENTS
 2 cup maida
 1/2 cup coco-powder
 1 1/2 tsp baking soda
 1 tsp salt
 1 1/2 cup sugar
 1/2 cup oil
 2 cup grated zucchini
 2 tsp vanilla essence
 1/2 walnuts (optional)
 3-5 tbsp water

 METHOD
Pre-heat oven to 350°F. Mix all dry  ingredients and set aside. Whisk together oil, sugar and vanilla.  Add the dry ingredients mixture. Now fold the zucchini and let the batter set for few minutes. If your mixture is very powdery ,add some water. The batter should be thick but not powdery. Bake for 25-30 minutes.

Serve the Brownie hot with Vanilla Icecream and enjoy! 
Best way to make children eat zucchini 🙂.

Lemon Coriander Soup 🍲👩‍🍳

A bowl of lemon and coriander soup can make all that cough blues go away from you in heavy monsoons or in a cold biting weather.
The soup is warming, nutritious and loaded with vitamin C. 

Ingredients:
1 tbsp lemon juice
1/4 cup finally chopped coriander
2 tsp oil
2 tsp finely chopped garlic
2 tsp finely chopped green chillies
1/4 cup finely chopped onions
1/4 cup finely chopped cabbage
1/4 cup finely chopped carrot
3 cups basic vegetable stock
Salt
2 tsp cornflower dissolved in 2 tbsp water

Method:
Heat the oil in a deep non-stick pan. Add garlic, green chillies and sauté on a medium flame for few minutes. Add onions and sauté for 1 to 2 minutes. Now add cabbage and carrots, and sauté for 1 minute. Add the basic vegetable stock, lemon juice, salt and cornflower-water mixture and mix well. Cook on a medium flame for 2 to 3 minutes, while stirring occasionally. Add coriander and mix well.
Serve the soup immediately and enjoy 😋
