GALETTE BRETONA⁠⠀

📝 Ingredientes 6 galettes:⁠⠀
⠀⁠⠀
🔸 200 g de harina de trigo sarraceno integral⁠⠀
🔸 1 huevo M⁠⠀
🔸 600 ml de agua fría⁠⠀
🔸 1 cucharadita de sal⁠⠀
Relleno⁠⠀
🔸 300 g de espinacas ⁠⠀
🔸 4 ajos finamente picados⁠⠀
🔸 100 g de queso rallado⁠⠀
🔸 12 lonchas de jamón ibérico⁠⠀
🔸 6 huevo (1 por galette)⁠⠀
🔸 Sal y pimiento molida⁠⠀
🔸 Aceite de oliva virgen extra⁠⠀
⠀⁠⠀
👉 Preparación:⁠⠀
⁠⠀
-Mezcla la harina de trigo sarraceno con el huevo, el agua y la sal con una batidora o unas varillas hasta que no queden grumos. Deja reposar durante 30 minutos. ⁠⠀
-Para el relleno saltea los ajos en una sartén con de AOVE. Añade las espinacas, tapa la sartén y deja que se reduzcan unos 3 minutos. Salpimienta al gusto y reserva.⁠⠀⁠⠀
-Unta con aceite una sartén antiadherente o crepera y ponla a fuego medio-alto. Echa un cucharón de masa y mueve la sartén para que se extienda por toda la superficie. Debe quedar fina, si ves que la masa es demasiado espesa añádele más agua y mezcla bien. ⁠⠀
-Cuando los bordes se empiecen a levantar dale la vuelta.⁠ Pon un par de cucharadas de queso en el centro dejando un hueco en medio. Casca ahí un huevo, añade una pizca de sal y con ayuda de una espátula extiende la clara del huevo sobre la galette para que cuaje. Si ves que no cuaja ponle encima una tapa de cazuela y espera 1 minuto. ⁠⠀
-Reparte alrededor del huevo unas pocas espinacas y pon también unos trozos de jamón ibérico. ⁠⠀
-Dobla los 4 lados.
-Puedes conserver la masa de galette en la nevera durante 2 días.⁠⠀

privi del fascino del salotto, sono cibo degli dei se mangiati sotto un albero.

Le vacanze sono davvero vicine, ancora una settimana di lavoro e poi finalmente "staccheremo la spina " .
Fortunatamente abbiamo un camper e quest'anno più che mai  credo sia veramente un vantaggio , oltretutto ho pure il forno e considerato che andremo  in un campeggio a 1800mt di altitudine...direi che se anche lo accendo non dovrebbe dare fastidio 😬)
Quindi già mi vedo a gustare su un prato cibi semplici come questa Galette ai mirtilli. Non vedo proprio l'ora di partire ⛰️🚙

Hara Bhara Kebab Savory Galette

“Main bhi Insta Chef banna chahti hu!”

Only a few weeks back, I was struggling to reach 1K followers and see where I am today! No not followers wise, wahan toh struggle and laalach is never ending. I meant, this mediocre cook, trying to compete with fantastic chefs here.
But like I always say, I enjoy these contests and hold all the appreciation I get here on Insta close to my heart.

Here’s Hara bhara kebab stuffed in whole wheat dough to make savory galettes, and is being sent to #instachef2020 being hosted by @consciousfeasting @flatter_platter_ @lovecookandfly @viniscookbook, judged by @dinedeliciousfood @supaintsonplates, sponsored by @fructus_terra and featured by @cafesncities. I used mystery box 3 - Herbs/Leaves (Spinach and Cilantro and Brussel Sprouts) + Whole Wheat Flour. Tagging @ginger.vinger @recipe_.rolling @wov_byricha to participate.

For the kebabs, in a little oil cook minced garlic and chopped green chillies, followed by green peas and green beans. Once cooked, add a whole lot of spinach and cook till it wilts. Cool and grind with cilantro. Add boiled, mashed potatoes. Add some whole wheat bread crumbs, salt, garam masala and amchur powder and mix well. Form small balls and toss in a little oil and cook for 2-3 minutes to bring out the color. Do not let it turn brown.

For galette dough, take 1 and 1/3 cup whole wheat flour, 1.5 cup chilled and cubed butter and some salt. Mix well and add 1-2 tbsp chilled water to bring the dough together. Chill the dough again. 

When ready to bake, roll out the dough into 1/4 to 1/2 inch thickness, layer with crumpled paneer or cheese of your choice and place kebabs leaving about an inch on all sides. I stuffed some brussel sprouts too (Getting bonus points for using extra leafy veggies, eh??). Bring the edges together to form bowl like shape. Bake at 350 F for 25 mins. 
P.S.- Also tried to give the galette a little Indian touch and made some pinching patterns on the sides. Noticeable?
