Butterfly pea flower swirl bread 💙

Ingredients 
240g bread flour *240g 
120g milk of choice 
3 tbsp condensed coconut milk 
2 tbsp sugar of choice 
1 1/2 tsp active dry yeast 
1/4 tsp pink salt

40g dairy free butter 

1 tsp @suncorefoods butterfly pea flower powder *3g (dissolved in 1 tsp water) 

In a stand mixer, add all ingredients except for butter. Mixing on low-medium speed with the hook attachment until the dough comes together, about 10 mins. Add butter, a few pieces at a time. Scrape down the bowl. Continue to kneading on medium speed for 10 mins until the dough is smooth. 

Remove half of the dough from the mixer, set aside. Add butterfly pea flower powder into the half dough and continue kneading until it combined. Knead plain dough and butterfly pea flower dough into balls. Cover let them proof for 1 hour until doubled in size. 

Transfer to a clean surface. Form the dough into a ball and let it rest for 10 mins. Roll out dough until they form thin rectangle. Place butterfly pea flower dough on top of the white dough and begin rolling up the dough along the wide/long side of the rectangle, Place it in a bread pan and let rise until doubled in size, about 1 hour. Bake at 190c for 30 minutes.

BEST EVER ROASTIES 🥔 ~ STOP SCROLLING this is the BEST way to make roasties. 👏🏻😱 Your potato game will be changed forever after making these. 😉
Here’s how to do it (serves 4 for a roast dinner) :
🥔 Peel 3 large Maris Piper potatoes and cut into 4. 
🥔 Add to a large saucepan with a generous amount of sea salt and 1 tsp of bicarbonate of soda (makes them SUPER fluffy). 
🥔 Add water and bring to the boil. Cool for about 7 minutes until just fork tender. 
🥔 Drain the water and add 1.5tbsp cornflour, salt and pepper and fresh thyme. 
🥔 Shake your saucepan (with the lid on haha) to fluff up your potatoes and leave to rest for 5-10 mins. 
🥔 Heat up some oil in a pan in the oven (I find high quality olive oil works best). 
🥔 Add the potatoes and coat them in the oil. 
🥔 Cook for 15 mins at 200 degrees celcius and then turn them over and cook for a further 15 mins. 
🥔 Sprinkle over some extra salt and fresh thyme and serve! Enjoy! 😋✨
